Why We Eat This Way
Sindhi Curry: The Recipe That Had Nowhere to Return To
Some foods return you to a place. Sindhi curry carries the harder burden of holding on when the place itself cannot be returned to easily.
Sunday ko curry patli hoti thi.
Patli, khatti, thodi si peeli.
Rice pe daalte hi fail jaati.
Drumsticks side mein. Aloo soft. Besan ka woh taste jo pehle halka lagta hai, phir dheere dheere poora bowl le leta hai.
Yeh restaurant wala khana nahi tha.
Koi order nahi karta tha isse.
Ghar mein banta tha.
Bas ghar mein.
Agar aapne khayi hai, toh aap samajh jaoge.
Agar nahi khayi, toh explain karna mushkil hai.
Sindhi curry ka problem yeh tha:
Iske paas wapas jaane ki jagah nahi thi.
Partition mein bahut log uproot hue.
Punjabis Lahore se aaye. Bengalis Dhaka se.
Dard alag tha, par map pe ek doosri side thi.
Ek jagah jise point kar sakein.
Sindh poora Pakistan chala gaya.
Koi "Indian Sindh" nahi bacha.
"Koi map nahi bacha tha point karne ke liye. Toh logon ne coordinates kahin aur rakh diye - ek patile mein."
Hyderabad. Karachi. Sukkur.
Sab wahi reh gaya.
Jo nikla, poora nikla.
Log aaye Mumbai. Ulhasnagar. Pune. Delhi.
Naye sheher. Nayi language. Naye neighbours.
Par kitchen mein ek cheez wahi rahi.
Sindhi curry.
Recipe likhi nahi jaati thi.
Dikhaayi jaati thi.
Besan kitna bhunna hai.
Kab color badal raha hai.
Kab khattapan sahi lag raha hai.
Yeh sab naap ke nahi hota tha.
Bas pata hota tha.
Ek haath doosre haath ko dikhata tha.
Phir woh aage.
Phir aur aage.
Language weak ho gayi kai jagah.
Addresses change ho gaye.
Cities naye ho gaye.
Par curry wahi rahi.
Sunday ko table pe aa jaati.
Patli. Khatti. Garam.
Rice ke upar.
Drumsticks jaldi nahi bante.
Time lete hain.
Curry bhi.
Pehli generation ko Sindh yaad tha.
Doosri ko stories yaad thi.
Teesri ko shayad sirf taste yaad raha.
"Where are you from?"
Question simple tha.
Answer kabhi simple nahi tha.
Mumbai?
Delhi?
Ulhasnagar?
Haan.
Yeh un logon ke liye thi jo already samajhte the.
Kaunsi khattash sahi hai.
Besan kitna bhunna hai.
Rice kitna lena hai.
Koi map nahi bacha tha point karne ke liye.
Toh logon ne coordinates kahin aur rakh diye.
Ek patile mein.
Aur har Sunday...
kahin na kahin...
woh curry phir ban rahi hoti hai.
Historical note
Partition did not just move bodies. It separated communities from kitchens, cities, and reference points, leaving recipes to carry memory where maps no longer could.
This story follows Partition-era community memory and the oral transmission of recipe knowledge within Sindhi families.
